Garlic Shrimp Pasta <br> 意大利麵 <br/>

This is unquestionably the simplest spaghetti recipe that I always cook at least twice a month without fail.

It will never go wrong if the pasta is cooked al-dente & saltiness seasoned nicely.

These are the 2 things to pay extra attention.

Let’s get started making pasta!

INGREDIENTS (2 SERVINGS)

250 grams of pasta

300 grams of medium size shrimps

3 Tbsp of Olive oil

3 to 5 cloves of chopped garlic

1 red chili pepper (pith and seeds removed, chopped) / 1 Tbsp of red chili flakes

Appropriate amount of salt for seasoning

INSTRUCTIONS

Some prep works before stir-frying …

Pasta

1. Boil pasta in water with pinch of salt. Once done, soak pasta in cold water to avoid pasta gets gummy.

Set aside for later use.

*Note*

Reduce cooking time by 2 min according to the cooking instructions given on packaging.

This is to avoid pasta overcooked as we will need to stir fry pasta later on to mix it with other ingredients.

Alternatively, the best way is to test taste one noodle strand to check whether the texture is chewy & soft.

Shrimps

1. De-shell & devein shrimps and soak in salt water for 5 mins and then rinse off. This will make tasty & succulent shrimps.

2. In the same wok with the leftover water used to boil pasta, boil shrimps until flesh turns salmon-pink color. This is to remove the undesirable fishy smell. Once done, quick run cold water, drain and set aside.

Once the above prep works are done, ready to cook!

1. Heat olive oil in a wok at medium low heat.

2. Add chopped garlic and stir fry until the aroma released.

3. Toss in pasta and do a quick stir.

4. After 30 seconds, add in shrimps. Mix well together with pasta.

5. Add in red chili pepper or red chili flakes or both.

6. After 1 min, season with appropriate amount of salt. Stir fry to make salt well-distributed. Make sure the saltiness level is alright.

7. Turn off heat and serve while it is hot.
