Sliced Fish Soup <br> 魚片湯 <br/>

I just made this “stomach-warming” sliced fish soup few days ago.

The way to make this soup is straightforward,easily done in about 15 min with ready anchovy stock.

Here we go taking a short tour to see how this soup is done :)

INGREDIENTS (2 SERVINGS)

200 grams of sliced fish

1 block of medium firm tofu (about 200 grams) (silken tofu will be nice as well)

800 ml to 1000 ml of anchovy stock (How to make: Anchovy Stock)

1 tomato (quartered)

1 thin slice of ginger

1 small chalk of coriander (roughly chopped)

Appropriate amount of white pepper powder & salt for seasoning

INSTRUCTIONS

1. Boil 800 ml to 1000 ml of anchovy stock.

2. When soup stock is boiling, add 1 thin ginger slice; this step can lessen the fishy smell.

3. After that, add in tomatoes, and then follow by tofu.

4. Cover sauce pan and let the soup stock boil again for about 30 sec.

5. Add in sliced fish.

6. Cover sauce pan one more time & let it simmer for the last time for another 30 sec.

7. Season with white pepper powder & salt. Taste & adjust saltiness if necessary.

8. Lastly, turn off heat and garnish with chopped coriander.
