Potato Chicken Stew <br> 馬鈴薯燜雞肉 <br/>

This is a common home cooked dish in almost every Chinese family that is SO well-loved by the family members.

A down-to-earth dish that uses simple ingredients easily found in the kitchen.

Enjoy this dish the donburi (丼) style if you like; serve on top of warm white rice, the combination is unmistakably palatable when the chicken, potato, rice & the flavorful gravy meet together.

It’s utterly toothsome!

INGREDIENTS (2 SERVINGS)

1 Drumstick

Marinade

1 Tsp Sugar | 2 Tsp Potato starch | 1 Tsp Soy sauce

Drizzles of sesame oil | Dash of white pepper powder

1 Large potato (cut into big chunks)

7 to 8 thin ginger slices

1 Tbsp chopped garlic

3 to 4 sections of white part of green onion

Green onion (for garnishing)

SEASONINGS

1 Tbsp of oyster sauce

1 Tsp of Shaoxing wine

1 Tsp of sugar

Drizzles of dark soy sauce

150 ml Water / Any soup stock

INSTRUCTIONS

1. Fry potato until the chunks are slightly coated brown. Set aside.

2. Heat 2 Tbsp of cooking oil at medium high heat. I use the oil to fry potato earlier.

3. Add ginger slices, white part of green onion & chopped garlic. Stir fry for about 1 min until fragrance released.

4. Toss in chicken drumstick.

5. After about 1 min, pour in seasoning mixture.

6. Toss in browned potato chunks.

7. Pour hot water enough to cover chicken and potato.

8. Cover pot to let it simmer for about 20 min.

9. After 20 min, remove lid and thicken sauce with cornstarch water.

10. Turn off heat and it’s done!
