I just came back from a short vacation, there's nothing much left in the fridge, only some leftover frozen cooked rice.

So I decided to make kimchi fried rice for dinner.

To make kimchi fried rice, here's are the few ingredients to prepare beforehand.

INGREDIENTS (1 SERVING)

1Tbsp of cooking oil

1 clove of chopped garlic

1 cup of chopped kimchi

1 Tsp of Gochujang

1 Tsp of sugar

2 cups of cooked rice

3 Tbsp of kimchi juice

1 Tsp of red chili flakes

3 stalks of bok choy (blanch, squeeze out excess water and cut into thin strips)

3 Tbsp of sesame oil

INSTRUCTIONS

1. Heat 1 Tbsp of cooking over medium high heat.

2. Saute chopped garlic about 30 seconds.

3. Add in chopped kimchi and continue to stir fry for another 30 seconds.

4. Add in Gochujang & sugar, 1 Tsp each.

5. Toss in cooked rice & mix well.

6. Add 3 Tbsp of kimchi juice.

7. And then, add 1 Tsp of red chili flakes for extra spiciness to your liking.

8. Add in bok choy strips, and make it well distributed in the rice.

9. Drizzle 2 Tbsp of sesame oil to kimchi fried rice & mix well.

10. Turn off heat & serve.
