Pig's Tail Soup with Peanut <br> 豬尾花生湯 <br/>

EFFICACY

For healthy spleen and stomach

Blood-nourishing

Good for boosting lactation

INGREDIENTS (4 SERVINGS)

8 cups of water (equivalent to 1.6 liters)

300 grams of meaty pork bones & 2 pig tails​

8 red dates (pitted)

Small grab of dried scallops

2 cloves of garlic

100 grams of peanut (soak in water overnight or at least 2 hours)

1 Tsp of salt for seasoning

Meaty pork bones & pig tails: blanch in hot water for 5 minutes and rinse thoroughly to get rid of extra blood, which in turn reducing unpleasant smell comes from pork.

Red dates: cleanse thoroughly and remove pits.

Dried scallops: soak in water for about 5 minutes & cleanse.

Garlic: cleanse and cut off clove base.

Peanut: cleanse and soak in water overnight over kitchen top, or at least 2 hours..

Pick out & throw away bad nuts if there is any.

INSTRUCTIONS

1. In boiling water, add in all ingredients (except pig's tails). Boil at medium high heat for 10 minutes. Turn low heat & let it simmer for 2 hours.

2. After 2 hours, add in pig's tails, bring back to a boil & let soup simmer at low heat for another 1 hour. (Pig's tails are added 1 hour before soup is done to avoid overcook)

3. After 1 hour, season soup with 1 Tsp of salt.

4. Stir well and soup is done.
