Pork Bulgogi Onigirazu <br> 豬肉飯糰 <br/>

Onigirazu (Japanese rice sandwich) became very popular in Japan last year 2015.
It is easy to make and can be prepared with assorted fillings according to personal liking: such as all kinds of greens, spam, fried egg, tonkatsu (Japanese pork cutlet), cheese, salmon etc.
Here's one recipe for pork Bulgogi Onigirazu.
INGREDIENTS (Yield 4 Onigirazu, Halved into 8 Pieces)
Nori sheet ... 4 pieces
Sushi rice ... 1 cup
Season sushi rice with 1 Tbsp of sushi vinegar, 1 Tsp of brown sugar, 1 Tsp of salt
Pork Bulgogi
Bulgogi Ingredients
Pork shoulder (cut into thin strips) ... 200 grams
Green onion (cut into roughly 5 cm long sections) ... 1 stalk
Onion (thin slices) ... ½
Carrot matchsticks ... ½ cup
Minced garlic ... 2 cloves
Bulgogi Marinade
Soy sauce ... 1½ Tbsp
Sesame oil ... 1 Tbsp
Grated Asian pear / apple ... 1 Tbsp
Brown sugar ... 1 Tsp
Grated ginger ... 1 Tsp
Ground black pepper ... Small amount
1. Marinate mixture of Bulgogi Ingredients & Bulgogi Marinade for 30 min.
2. Heat pan with 1 Tbsp cooking oil.
3. Stir fry pork Bulgogi with 1 Tsp of dark soy sauce to give some nice brown color.


OTHER FILLINGS
Fried egg ... 1
Spinach
1. Blanch 2 to 3 stalks of spinach for about 30 seconds.
2. Squeeze out excess water.
3. Cut to equal length about 5 cm.
4. Season with pinch of salt and 1 Tsp sesame oil.

Danmuji (yellow pickled radish)
Cut into matchsticks, amount about ½ cup.

INSTRUCTIONS
1. On kitchen top or an even working surface, place nori sheet (shiny side face down) on top of cling wrap.

2. Spread sushi rice evenly in the center of nori sheet by making a square shape. *Keep hands damp to handle sticky sushi rice*

3. Then, put thin layer of fillings (pork Bulgogi, spinach, fried egg & danmuji) on top of sushi rice base.


4. Layer the top with sushi rice.

5. Gather all 4 corners of nori sheet towards the center, fold and press lightly to wrap around Onigirazu nicely.


6. Flip Onigirazu over and then wrap with cling wrap.


7. Cut Onigirazu when nori sheet softens.
*Keep knife barely wet, this makes a clean slice through*

8. And it's done!
