Sweet & Sour Pork Ribs <br> 糖醋燴排骨 <br/>

I have been making this dish quite regularly since I picked up the recipe from a relative.

Preparation takes little time and all ingredients are relatively basic and easily obtained. Furthermore, no frying and no oil are needed, what is required is merely on the heat control to make sure pork ribs are not burnt during the cooking process.

After an hour braise, pork ribs are mellow, smooth and soft, which makes it matches well with steamed white rice unmistakably.

Let’s see how to make this simple dish.

INGREDIENTS (2 SERVINGS)

Pork ribs ... 300 grams

* Ginger ... 3 to 4 slices

* Brown sugar / Rock sugar ... 1 Tbsp

* Light soy sauce ... 1 Tbsp + 1 Tsp

* Black sweet rice vinegar ... 1 Tbsp + 1 Tsp

* Red wine ... 1 Tbsp + 1 Tsp

Sweet plum vinegar ... 1 Tbsp

Green onion ... 2 to 3 stalks (cut equal length about 10 to 15 cm)

Note

Do not cook acidic food (examples: tomato, lemon, vinegar etc.) with reactive cookware made of aluminum, copper, iron and non-stainless steel.

Foods will take in chemical toxins produced from reactive cookware during cooking process, which in turn is harmful to health when we consume these foods.

It is the best to use earthenware such as ceramics, clay pot, pottery, stainless steel when cooking acidic food.

INSTRUCTIONS

1. Using * ingredients, marinate pork ribs for 2 hours or at least 30 min.

2. Lay green onions at the bottom inside a clay pot and top with marinated pork ribs.

3. Turn on medium low heat to start braising pork ribs. When the gravy starts boiling, turn to very low heat.

4. Check from time to time to prevent burned pork ribs. Add small amount of water if gravy running dry.

5. After 30 min, turn pork ribs to another side and let it braise for another 25 min.

6. After 25 min, add 1 Tbsp of plum vinegar to the pork ribs. This step is to add more tanginess to the dish, as some may have evaporated during the cooking process.

7. Mix plum vinegar well & let it braise for another 5 min and this dish is ready to serve.
