Old Cucumber Soup <br> 老黃瓜排骨湯 <br/>

EFFICACY

Helps detoxification in body system

Expels body heat and eliminates dampness

INGREDIENTS (4 SERVINGS)

Water ... 2 liters

Pork meat bones (blanched) ... 300 grams

Medium-sized old (matured) cucumber (pith removed) ... 1

Pitted red dates ... 10

Dried scallops ... Small hand grab

Garlic (base cut off) ... 2 to 3 cloves

Dried oysters ... 2

Dried sun moon fish / mollusk ... 4 to 5

Salt for seasoning ... 1 Tsp

Pork meat bones: Blanch pork meat bones for about 3-5 min with 2 to 3 ginger slices. Wash meaty pork bones to remove impurities.

Old (matured) cucumber: Wash outer skin thoroughly, have the pith removed and cut into 4 big chunks.

Red dates: Wash clean & remove pits.

Dried scallops: Wash clean.

Garlic cloves: Wash and cut off clove base.

Dried oysters: Wash clean.

Dried sun moon fish / mollusk: Wash clean.

INSTRUCTIONS

1. In boiling water, add in all ingredients. (pork meat bones, old cucumber, red dates, dried scallops, garlic, dried oysters, and dried sun moon fish)

2. Close lid, bring back to boil over medium high heat for 8-10 min.

3. Turn low heat & let it simmer for 3 hours.

4. Before turning off heat, season soup with 1 Tsp of salt or more for the right saltiness. Mix well and turn off heat & soup is done!
