Winter Melon Soup <br> 冬瓜排骨湯 <br/>

EFFICACY Expels body heat and eliminates dampness Lowers cholesterol & blood pressure levels​

INGREDIENTS (4 SERVINGS)

Water ... 2 liters

Pork meat bones (blanched) ... 300 grams

Round slice of winter melon (pith removed) (the one I used is about 5 cm thick & 18 cm diameter)

Small-sized carrot (chunked) ... 1

Pitted red dates (pitted) ... 10

Dried octopus ... 3 pieces

Dried scallops ... Small hand grab

Garlic (base cut off) ... 2 to 3 cloves

Salt for seasoning ... 1 Tsp

Pork meat bones: Blanch pork meat bones for about 3-5 min with 2 to 3 ginger slices. Wash meaty pork bones to remove impurities.

Winter melon: Peel skin and remove pith, cut into big chunks.

Carrot: Remove skin & cut into chunks.

Red dates: Wash clean & remove pits.

Dried octopus: Wash clean.

Dried scallops: Wash clean.

Garlic cloves: Wash and cut off clove base.

INSTRUCTIONS 1. In boiling water, add in all ingredients. (pork meat bones, dried scallops, dried octopus, red dates, carrot chunks, winter melon chunks & garlic cloves)

2. Close lid, bring back to boil over medium high heat for 8-10 min.

3. Turn low heat & let it simmer for 3 hours.

4. Before turning off heat, season soup with 1 Tsp of salt or more for the right saltiness. Mix well and turn off heat & soup is done!
