Bitter Gourd Soup <br> 苦瓜排骨湯 <br/>

EFFICACY

Cools body heat down

Lowers cholesterol & blood sugar levels

INGREDIENTS (4 SERVINGS)

Water ... 2 liters

Pork meat bones (blanched) ... 300 grams

Large-size bitter gourd (chunked) ... 1

Died oysters ... 2 to 3

Garlic (base cut off) ... 2 to 3 cloves

Salt for seasoning ... 1 Tsp

Pork meat bones:

Blanch pork meat bones for about 3-5 min with 2 to 3 ginger slices.

Wash meaty pork bones to remove impurities.

Bitter gourd:

Remove pith & cut into big chunks.

Rub bitter gourd chunks with 1 Tbsp of salt and let it rest for 30 min to drain out bitterness. Rinse off.

Dried oysters: Wash clean.

Garlic cloves: Wash and cut off clove base.

INSTRUCTIONS

1. In 2 liters boiling water, add in pork meat bones, garlic cloves & dried oysters.

2. Close lid, bring back to boil over medium high heat for 8-10 min.

3. Turn low heat & let it simmer for 2 hours 15 min.

4. Bring back soup to a medium-boil, add in bitter gourd chunks. Let soup come back to a boil again & simmer over low heat for 45 min.

Avoid excessive cooking time of bitter gourd to retain its taste and to prevent bitter gourd from becoming too pulpy and yellowish.

5. After 45 min, season soup with 1 Tsp of salt or more for the right saltiness. Mix well and turn off heat & soup is done!
