Watercress Soup <br> 西洋菜湯 <br/>

EFFICACY

Relieves cough, impels phlegm and nourishes lungs

Reduces body heat

Improves appetite

INGREDIENTS

2 liters of water ... 2 liters

Chicken meat bones ... About 400 grams

Watercress ... 1 stalk

Pitted red dates ... 8 to 10

Honey date ... 1

Garlic ... 2 to 3 cloves

Dried octopus ... 2 pieces

Sweet and bitter almonds ... Small amount

Salt for seasoning

Chicken breast with bones:

Blanch for about 3-5 min with a knob of slightly bruised ginger;

and then wash thoroughly to remove impurities.

Dried octopus: Rinse off cleanly.

Sweet and bitter almonds: rinse off.

Red dates: rinse and remove pits.

Honey date & garlic cloves: rinse off.

Watercress: Soak in water for 15 min & rinse off.

INSTRUCTIONS

1. Add in all ingredients (chicken breast with bones, dried octopus, sweet & bitter almonds, red dates, honey date & garlic cloves) to 2 liters of boiling water, except watercress.

2. Bring to a boil over medium high heat for 8 to 10 min. Turn low heat and let it simmer for 2 hours.

3. After 2 hours, add in watercress and continue to simmer over low heat for another 1 hour.

♪ Note ♪

Make sure soup is boiling when adding watercress to prevent bitterness.

4. After 1 hour, season soup with about 1 Tsp of salt or more for the right saltiness.

5. Turn off heat and soup is ready to serve.
