Crab With Glass Noodles <br> 螃蟹粉絲 <br/>

This recipe is adapted & modified from Pailin's Kitchen from Hot Thai Kitchen.

I was on cloud nine after I found this great recipe, it turned out so good each time without fail.

INGREDIENTS (2 SERVINGS)

Crab ... 1

Glass noodles (soak to soften and drain dry) ... 1 pack (40g)

Sauté Ingredients

Garlic ... 6 cloves

Ginger ... 10-15 slices

Coriander root ... 1

Ground peppercorns (black & white) ... ½ Tsp

Cooking oil ... 2 Tbsp

Marinating Sauce for Crab & Glass Noodles

Water ... 1 cup

Oyster sauce ... 2 Tbsp + 1 Tsp

Light soy sauce ... 2 Tbsp

Sesame oil ... 1 Tbsp

Dark soy sauce ... 1 Tsp

Sugar ... 2 Tsp

PREPARATION

A. Cleaning the crab

  1. Usually crab is alive and tied down with ropes when we buy it from the wet market.

  2. Before untying, use one chopstick (or a solid slender stick with sharp end) to poke through the crab heart to kill it.

  3. Untie the ropes and remove the carapace.

  4. Remove gills and other impurities.

  5. Divide crab into quarters.

  6. Use kitchen brush to scrub off any grime ingrained on the shell surface.

  7. Crack the shell of pincers and legs slightly for easier consumption.

  8. Rinse clean with water.

B. Sauté ingredients

  1. Pound garlic cloves & coriander root lightly.

  2. Mix all sauté ingredients in a bowl and set aside.

C. Marinating sauce

1. Mix all marinating sauce in a container until black soy sauce and sugar dissolved.

2. Pour ⅓ amount of marinating sauce to glass noodles.

3. Pour the rest of the marinating sauce to crab pieces.

4. Flip glass noodles and crab pieces to make sure all sides of the food get marinated evenly. (each side has to be marinated for at least 15 min)

INSTRUCTIONS

1. Add sauté ingredients into a heated pan, stir fry until fragrant released for about one min.

2. Add crab pieces (except carapace) & stir fry for a short while.

3. Cover pan and simmer for 8-10 min.

4. Add carapace & glass noodles, mix well.

5. Cover pan again and simmer for another 5 min.

6. Give a final stir, turn off heat & serve while it is hot / warm.
