Chinese Yam Sweet Corn Soup <br> 山藥玉蜀黍湯 <br/>

EFFICACY

Eliminates fatigue

Strengthens immune system

INGREDIENTS (4 SERVINGS)

Water ... 3.5 liters

Pork meat bones ... 300 grams

Chinese Yam ... 300 grams

Sweet corn ... 1 ear

Goji berries / Chinese wolfberries ... Small hand grab

Dried scallops ... Small hand grab

Pitted red dates ... 8 to 10

Garlic ... 2 to 3 cloves

1 Tsp of salt for seasoning

Pork meat bones: blanch for 5 minutes and rinse thoroughly to get rid of extra blood and unpleasant smell comes from pork.

Chinese Yam: remove skin and cut into big chunks.

Sweet corn: remove husk leaf and corn silk and divide into 4 to 5 sections.

Gojiberries / Chinese wolfberries: rinse clean

Dried scallops: soak in water for about 5 minutes & cleanse.

Pitted red dates: cleanse thoroughly and remove pits.

Garlic cloves: rinse clean.

INSTRUCTIONS

1. In 3.5 liters boiling water, add in all ingredients (except sweet corn). Boil over medium high heat for 5 to 8 min. Simmer over low heat for 1.5 to 2 hours.

2. After 1.5 to 2 hours, add in sweet corns, bring back to a boil & let soup simmer over low heat for another 45 min. (Keeping the sweetness of sweet corn by adding it to the soup at a later stage)

3. After 45 min, season soup with 1 Tsp of salt (or appropriate amount) for the right saltiness.

4. Stir well and soup is done.
