Herbal Chicken Soup<br> 淮山玉竹雞湯 <br/>

EFFICACY

Replenishes vital essence

Nourishes the body

Strengthens spleen and restores energy

Strengthens immune system

INGREDIENTS (4 SERVINGS)

Water ... 2 liters

Chicken breast meat ... 300 grams

Huai Shan (Dried Chinese Yam) ... 2 to 3 pieces

Dang Shen (Codonopsis Root) ... 5 to 6 pieces (each section about 5 cm length)

Yu Zhu (Solomon’s Seal Rhizome) ... 20 g Gojiberries / Chinese wolf-berries ... 1 Tbsp

Pitted red dates ... 8 to 10

Garlic ... 2 to 3 cloves

1 Tsp of salt for seasoning

Chicken breast meat: blanch for 5 minutes and rinse thoroughly to get rid of extra blood & unpleasant smell.

Huai Shan (Dried Chinese Yam): wipe with dry kitchen towel.

Dang Shen (Codonopsis Root): wipe with dry kitchen towel.

Yu Zhu (Solomon’s Seal Rhizome): rinse clean and soak for about 5 min.

Gojiberries / Chinese wolf-berries: rinse clean

Pitted red dates: cleanse thoroughly and remove pits.

Garlic cloves: rinse clean.

INSTRUCTIONS

1. In 2 liters boiling water, place in all herbs and dried ingredients. Simmer over low heat for 30 min.

2. After 30 min, add in chicken breast meat, bring back to a boil & let soup simmer over low heat for another 2 hours.

3. After 2 hours, season soup with 1 Tsp of salt (or appropriate amount) for the right saltiness.

4. Stir well and soup is done.
