Beetroot & Sweet Corn Soup <br> 甜菜根玉蜀黍湯 <br/>

EFFICACY
Stimulates appetites

Expels body heat and eliminates dampness
INGREDIENTS (4 SERVINGS)
Water ... 2.5 liters
Pork meat bones ... about 300 grams
Beetroot ... 2 medium-sized
Sweet corn ... 1 cob
Pitted red dates ... 10 Goji berries ... 1 Tbsp
Garlic ... 2 to 3 cloves
Salt for seasoning ... 1 Tsp

Pork meat bones: Blanch for 5 minutes and rinse thoroughly to get rid of extra blood & unpleasant smell.

Beetroot: peel and cut into big chunks.


Sweet corn: wash and cut into big chunks.


Pitted red dates: cleanse thoroughly and remove pits.

Goji berries: rinse clean.

Garlic cloves: rinse clean.

INSTRUCTIONS
1. In 2.5 liters boiling water, place in all ingredients, except Goji berries and sweet corn chunks. Bring back to a boil for 5 min and simmer over low heat for 2 hours.
2. After 2 hours, add in Goji berries and sweet corn chunks, bring back to a boil & let soup simmer over low heat for another 45 min.
3. After 45 min, season soup with 1 Tsp of salt (or appropriate amount) for the right saltiness.
4. Stir well and soup is done.
