Chinese Yam Soup <br> 山藥湯 <br/>

EFFICACY

INGREDIENTS (4 SERVINGS)

Water ... 2.5 liters

Pork meat bones ... about 300 grams

Chinese Yam ... about 200 grams

Dried scallops ... 2

Pitted red dates ... 10 Goji berries ... 1 Tbsp

Garlic ... 2 to 3 cloves

Salt for seasoning ... 1 Tsp

Pork meat bones: Blanch for 5 minutes and rinse thoroughly to get rid of extra blood & unpleasant smell.

Chinese yam: peel and cut into small chunks.

Dried scallops: soak in water for about 5 min & rinse clean.

Pitted red dates: cleanse thoroughly and remove pits.

Goji berries: rinse clean.

Garlic cloves: rinse clean.

INSTRUCTIONS

1. In 2.5 liters boiling water, place in all ingredients, except Goji berries and Chinese yam chunks. Bring back to a boil for 5 min and simmer over low heat for 1.5 hours.

2. After 1.5 hours, add in Goji berries and Chinese yam chunks, bring back to a boil & let soup simmer over low heat for another 45 min.

3. After 45 min, season soup with 1 Tsp of salt (or appropriate amount) for the right saltiness.

4. Stir well and soup is done.
