Stir-Fried Clams with Soybean Paste <br>「あさりの豆板醤炒め」<br/>「豆瓣酱炒蛤蜊」

INGREDIENTS (2 - 3 SERVINGS)

Clams ... 1 kilogram

Garlic ... 2 cloves (chop finely)

Ginger ... thumb-sized (slice thinly)

Green onion ... 1 stalk (cut about 2-inch long)

Chilies ... 3 (chop finely)

Soybean paste ... 1 Tsp

Sugar ... 1.5 Tsp

Rice wine ... 1 Tbsp

Fish sauce (optional) ... 1 Tsp

INSTRUCTIONS

1. Rub clamshells and wash cleanly.

Submerge clams in saltwater for about 1 hour to de-grit.

Soak clams in clean water for about 30 minutes to de-salt.

2. Add 1 Tbsp cooking oil to heated wok.

3. Add ginger, green onion & garlic. Stir fry lightly until fragrant.

4. Add soybean paste & sugar, mix well.

5. Add clams & stir fry thoroughly.

6. Pour rice wine around the edges of the wok.

7. Add chilies and stir fry lightly.

8. Cover wok and simmer until clamshells open up.

9. Lastly, add fish sauce (optional), mix well. Add it's done!
