Noodle Soup <br>「清湯麵」<br/>

INGREDIENTS (2 SERVINGS)
Anchovy Stock Ingredients:
Gutted dried anchovies ... about 30 g
Medium-sized onion ... 1/2
Water ... 1.5 L
Other Ingredients:
Noodles … amount for 2 persons
Pork slices ... 50 g (marinated with 1 Tsp light soy sauce, pinch amount of white pepper powder & potato starch)
Assorted fish cakes
Choy sum … about 10 stalks
Minced garlic … 1 clove
INSTRUCTIONS
1. Put anchovy stock ingredients to a saucepan / pot. Bring to a boil over high heat.
Lower heat and simmer for about 20 minutes.
Drain liquid into a bowl / container to remove anchovies & onion.
2. Parboil noodles for about 45 seconds. Rinse noodles with cold water to remove excess starch.
3. Add 1 Tbsp cooking oil to heated wok. Add garlic and sauté quickly.
4. Pour in anchovy stock.
5. When soup is back to a boil, add noodles, fish cakes, pork slices & choy sum stems.
6. Bring back to a boil and cook for about 1.5 minutes.
7. Add choy sum leaves and cook for another 30 seconds.
8. And lastly, add appropriate amount of salt to taste. And it’s done!
